Poliphonia references Georgian folk singing and also the idea of many different voices adding their distinctiveness to the whole. Somewhere between hazy pink and light-mid amber in colour, with apple skin and ripe citrus notes, a hint of white leaf tea and finishing on a note of pink grapefruit. The grapes for this wine are all picked on the same day, then pressed as whole bunches into qvevri and co-fermented. It spent 6 months on the skins in qvevri, before being racked into stainless and aged for a year in bottle before release.
