The region of Colmar has an unusually high level of sunshine and is known as is the second driest/least rainy city in France, (Perpignan being the driest). This wine spends 12 months in barrel, after a gentle slow pressing, and a spontaneous ferment. No fining or filtration. What's in a name: Elsassisch = Alsatian dialect. It translates to ‘Alsace is the Bomb!’
