Incredibly saline & mineral, cucumber & green apple with dried chamomile from the oxidative flor components. This is a slow ripening east facing site that only receives morning sun. The soil is clay with a high limestone bedrock. It's farmed organically by Aidan's friend, Zviad Mindadze. The site is in one of the smallest wine producing zones in Georgia, near the village of Tsilamieri, nestled under the Caucasus. Vines are 40-60 years old at 770m altitude. The wine is fermented in steel with ambient yeasts and then aged in large Georgian acacia barrels- not topped up- to encourage the growth of flor. Unfiltered, unfined with no added sulphites.
